➳ Pancakes, Beach Walks and Fireworks.

Yesterday was Australia day so seeing as I didn't have to go to work I started my day with a nice (and well deserved in my opinion) sleep in, a coffee that tasted like caramel and some delicious fruity vegan/gluten free pancakes! (Let me know if you want a recipe for these).

In the afternoon Me and Mum went for a walk along the beach, it was really nice, the weather was warm but slightly overcast and It was just nice to walk and feel the sand and the breeze, watch families having fun and celebrating the country we are all so lucky to live in. And of course snapping away with my new fancy camera.

  We finished our walk at the Grange Jetty Cafe and had the best hot chips for lunch that I washed down with a refreshing lemon, lime & Bitters.

Looking at the ocean, even just photos makes me feel at peace. I cant quite describe it but I know a lot of others feel it too, there's just something that kind of draws you in.

In the evening Callan and I headed into the City to watch the Australia Day fireworks just like we have done for the last two Australia Days (and of course I took many photos). Here are my favourites.

Teach your boys its okay to show emotions, teach your girls they are tougher then they think. Let your boys play with baby dolls, it will teach them compassion and let your girls play with trucks, it will teach them to be fearless.

"Love yourself"

This really is the most important thing to do. Never forget just how wonderful you really are.

➳ Banana Bread Recipe. + Free Printable Recipe Card.

Finally It's here! It has taken me a while but I have now perfected my vegan, gluten free and refined sugar free Banana Bread! Give it a go and let me know what you think! 

 I have also designed a free (of course) printable recipe card for you to print off and follow! It will be at the bottom of the post so check that out! 


2 Cups gluten free plain flour (I use F.G Roberts)
1 & 3/4 teaspoons baking powder (Ensure it is Gluten Free if needed)
some ground cinnamon (to taste)
1/4 cup coconut sugar
3 1/4 cups plant milk (soy, almond, oat, etc.)
50g vegan margarine (Nuttelex), melted
2 overripe large bananas, or 3 small, mashed

Preheat oven to 180°c. Sift together dry ingredients and stir in sugar.

Mash bananas.

Add wet ingredients.

Mix well.

Pour into lined or greased loaf tin and bake in preheated oven for 45-50 minutes or until a skewer inserted into the  centre comes out clean.
